So here is another dinner I put on the table and this one is big. I mean a lot of food.. I was sooo hungry and there was not much in the fridge besides a few left over baked veggies. Good thing I always keep some food in the freezer in case this happens. And just a few weeks ago i visited Aldi and found these Angus beef meatballs (and just know red meat has A LOT more fat than white meat). Doubled up the serving size (who wants to eat only 6 tiny meat balls? that's a tease!) and paired it up with baked squash and cauliflower. Added a tbsp of ketchup (yes, I LOVE ketchup) and some pickles and Voila! 28grams of protein are just the meat balls but they also take up most calories in this meal (520 to be exact). The rest is good yummy carbs. 

Recipe is simple: bake the veggies in the oven at 425F for about 20 to 30 minutes (spray them with olive oil and add your favorite spices). And bake meatballs according to recipe on the bag.. I do it in my little toaster oven. Simple. Another meal after a long day that is easy to make, great in proteins and full of healthy carbs. You can play with this one and do turkey meatballs (you will save calories but keep the proteins high!!!) or different vegies. The idea is to make a healthy dish QUICKLY AND SIMPLY - no crazy complicated recipes. I am sure you single moms appreciate this. And the kids love this too!
